Glass noodles

Glass noodles (vermicelli) are a noodle-like side dish in East Asian cuisine. They are very thin and almost transparent when cooked. The glass noodles made from bean starch contain neither salt nor fat. They are not to be confused with (rather dull white) rice noodles.
